Zwetschkenmarmelade á la Cornelia


  • 1kg Zwetschgen
  • 1kg Gelierzucker
  • 1 Zitrone
  • 1 Stange Zimt
  • 3 EL Zwetschgenwasser (wenn keine Kinder bei der Marmelade mitessen
Die Zwetschgen waschen, abtropfen lassen, längs aufschneiden und entsteinen.D ie Früchte in einem Mixer fein zerkleinern oder das Fruchtfleisch sehr klein schneiden. Das Zwetschgenmus in eine Schüssel geben und mit dem Gelierzucker vermischen. Die Zitrone ausdrücken und den Zitronensaft unter das Zwetschgenmus mischen. Die Zimtstange zum Mus geben. Den Topf abdecken und das Fruchtmus bei Zimmertemperatur einige Stunden ziehen lassen. Das Zwetschgenmus unter ständigem Rühren aufkochen und, ab diesem Zeitpunkt gemessen, 4 Minuten sprudelnd kochen lassen.
(Das Zwetschgenwasser unter das Mus mischen). Gelierprobe nehmen. Die Zimtstange entfernen. Die Marmelade falls erforderlich abschäumen und heiß in Twist-off-Gläser randvoll abfüllen. Die Gläser sofort verschließen, auf die Deckel stellen und ruhen lassen, bis die Marmelade abgekühlt ist.
